Description
The most preserving way of processing: Rinse buckwheat, pour 1.5 to 2times the amount of water over it, cook for 10 minutes and leave to stand under the lid for another 15 minutes.
The fastest way of processing: rinse buckwheat shortly, pour in a pot with boiling water and cook for approximately 7 minutes, leave to stand under the lid for a while if necessary.
Tip: Freeze cooked groats, you can add them into soups or porridges later.
Recipes:
- Side dish - everywhere where you would normally use rice or couscous
- Sweet puddings - mix cooked buckwheat with fruits (grated apples, plums, pre-soaked dried fruits), add nuts - whole or grated, sweeten with syrup, pour a plant-based cream and bake
- In vegetable salad - you will enrich your salad by adding buckwheat and you can serve it as a main course
- Mixtures to prepare fillings - prepare buckwheat mixture: combine cooked buckwheat with roasted onion, steamed vegetables and grated tofu, season, fill vegetables with the mixture and bake
- In soups - either cook buckwheat in the soup or add it pre-cooked; it tastes delicious in potato soup, kulajda soup, broths or tomato soups
Buckwheat is a seed that is devoid of hard peel, peeling can be either mechanical (the peel is gradually ground) or thermic (by steaming the whole peel, the peel breaks and can be easily removed) - the mechanical one is more gentle but has a lower yield. Groats are a basic buckwheat product to eat, all other buckwheat products are made from groats.
Buckwheat was brought to our country from Russia in 15th century and became a part of Czech meals especially in Moravia. It is particularly popular in France, where it is used for the preparation of famous pancakes - sweet crepes and salty galettes.
