Unlike black and green, white pepper is stripped of its skin, which contains sugar. The sweetish flavour is receded by the more spicy one. Due to its white colour, white ground pepper does not affect the appearance of any light food. It is mainly used in cream sauces, soups, cheeses or salad dressings.
