Description
It is a symbol of victory and glory, that is why the Roman Emperor Ceasar used to wear wreaths made of laurel leaves on his head. Bay leaf has gradually proved as useful seasoning as well. It has a sweetish taste and a balsamic scent similar to muscatels. Its taste matches best with lamb, beef or game. You will enjoy it also in soups, sauces and vegetable ragout.
You can chop bay leaves or cook them whole, without chopping. However, bay leaves should be removed before serving or you can put them in a pot with boiling meal in a sack made of natural material, where you can add other large pieces of seasoning, such as cinnamon, allspice or juniper, and then just simply take the little bag out. Bay leaf also belongs among herbs used in the so-called bouquet garni, which is a bundle of herbs that is cooked with the meal for the whole time and gives it an unforgettable herb flavour and aroma.
