Description
Grade A designation is used for maple syrup of the highest quality, which is finer and a little lighter than Grade C maple syrup. It is a traditional Canadian product - it's a concentrated Canadian maple sap. The syrup is produced by drilling openings into mature trees through which the sap flows into receptacles. Trees can live up to 250 years, the sap is produced at the age of 50 to 80 years. 35-40 litres of sap are needed per one litre of syrup. The raw sap contains up to 97% water, which then evaporates until the syrup is formed. In organic production, strict care must be taken to ensure that maples that produce the sap are mature and that taking the sap does not affect their development.
Maple syrup contains about max. 5% fructose, about max. 5% glucose and about 66% sucrose.
