Description

The buckwheat porrisge is made from crushed buckwheat by a process called extrusion (moistened buckwheat is exposed to high a pressure and temperature). This is an instant product and does not need to go through a further heat treatment.
Buckwheat is a gluten-free crop that has an unmistakable, slightly nutty flavour. Its use in the kitchen is wide, it can be used in both sweet and salty dishes. Buckwheat, along with quinoa and amaranth, belong among pseudo-cereals - in human nutrition, they are of the same use as cereals, but botanically belong to other groups. All pseudo-cereals are naturally gluten-free.
Tips and recipes to use buckwheat fine-ground:

  • Porridge

- cook buckwheat in a plant-based drink, add nuts, dried fruit, carob and sweeten it with your favourite syrup or dried cane juice

  • Cake basis

- Mix plant-based drink, dried fruit, sugar or syrup and a little bit of fat (coconut oil, clarified butter, organic margarine...), bring to boil and gradually add the porridge until a thick cream is formed, pour into a cake form and spread with a spoon soaked in hot water

  • Desserts

- The same procedure as at the cake basis preparation described above; create balls from the cooled "dough" and cover with coconut, cocoa beans, carob, sesame seeds, hemp seed, ground nuts...

  • Cocktail

- cook a sparse porridge, add blended nuts, bananas, seasonal fruits...

  • Béchamel sauce

- Mix 400 ml plant-based drink, add 3 full tablespoons porridge, salt, nutmeg and cook for 1 minute

  • Pancakes

- 300 ml plant-based drink, 2 eggs, 3 full tablespoons porridge, salt

  • As s soup or sauces thickener
  • Little dumplings for soups

- Cook the porridge, add grated tempeh, a couple of full tablespoons plant-based drink, crushed garlic, herbs, nutritional yeast, form dumplings and cook in the soup for 3-4 minutes

  • You can mix the buckwheat porridge with ther types of porridges
