Description
Carob (St. John´s bread) is a tasty alternative to cocoa. It comes from a tree called Carob Tree (Locust Tree), which grows mainly in the Middle East. It has been grown there for at least 4,000 years. Because of its naturally sweet taste, carob does not require sugar enrichment. Due to its fine consistency, it is not necessary to add a large amount of fat, which is common in the production of chocolate.
Pressing releases vitamins and minerals into the pulp. The pulp is then dried in a low-temperature dryer at a temperature of up to 50 ° C without the access of ambient air.
