Description

Tips:

  • Hummus - let 200 g buckwheat soak overnight, pour hot water on 100 g dried tomatoes and let aside for 15 minutes, strain both buckwheat and tomatoes, blend along with 200 g chickpeas (canned or cooked); flavour with lemon juice, tahini, clove of garlic and salt
  • Pesto - let 300 g dried tomatoes soak in hot water along with a little bit of balsamic vinegar, carefully roast 50 g pine nuts in a pan, strain tomatoes, put them along with pine nuts into a blender, add a sprig of oregano, parsley and basil, little bit of olive oil, blend the mixture; serve with linseed crackers or with pasta
  • Linseed crackers - let 300 g linseeds soak overnight, strain in the morning, put a half in a blender, add 2 onions, 1 clove of garlic, 100 g pre-soaked dried tomatoes and 50 g poppy seeds, blend until smooth and add the remaining half of linseeds, spread the mixture on a baking paper and dry in the oven at 50°C, until possible to peel the mixture off the paper, cut the layer in triangles and dry until crispy
  • Guacamole with dried tomatoes and basil - crush avocado, add pre-soaked (for 20 minutes) and cut dried tomatoes, add finely chopped onion, crushed clove of garlic, basil, 1 tablespoon lemon juice, add salt and pepper
  • Pickled dried tomatoes - soak tomatoes in hot water for 20 minutes, strain, pre-heat the oven to 170°C, place tomatoes on a baking tin with the cut facing up and pour a little bit of balsamic vinegar, put in the oven, which should be switched off immediately, leave the tin inside for several hours; put the cooled tomatoes in glass, complement the tomato layers with garlic and thyme, pour olive or sunflower oil in the end, store in the fridge
  • Soups - taste perfectly with red lentils and with soups of Mediterranean type
  • Home-made pastry - cut dried tomatoes and add them in the home-made bread or rolls dough
  • A part of a quiche filling
  • Spreads - tastes perfectly in a red lentils spread or goat cheese spread
  • In salads - tastes perfectly with rucola
  • In pasta, risotto, pizza
