It is made from sugar cane by a process of pressing and then by cooking the obtained juice. You can use its darker colour when colouring food, since its colour will be reflected in meals.
Sugar cane is a high, massive grass that can grow up to 6 meters. Its stalks contain pulp with a sugar content of about 20%. Sugar cane grows in tropical areas with rich soil only. In the Czech Republic, we have known cane sugar since the time of Crusade Wars. At the beginning, cane sugar was rather rarity, it has expanded with imports from the American continent. During Napoleon times, sugar cane was replaced by beet sugar, but has begun returning to our kitchens recently again.
