Thanks to its shape of eight-pointed stars, star anise is one of the most interesting spices. It has a slightly sweetish aroma with a spicy end. The taste is similar to fennel, but a bit sharper. It should not be missing in apple and other fruit compotes or in various types of pastries. It provides a warming effect. The Asian cuisine uses star anise to savoury dishes such as soups and stews. Star anise is always part of the famous Vietnamese pho soup.
